Job Overview
The Assistant Manager – Food Service Department will be responsible for overseeing kitchen operations, ensuring the preparation of meals meets quality standards, managing the kitchen inventory, and leading staff training. The role involves creating new dishes for patients, managing catering services, and ensuring food safety and hygiene standards are adhered to.
Key Responsibilities
- Recipe Creation & Staff Training: Develop new recipes to meet customer demands, and train kitchen staff to enhance service delivery, order handling, pricing, and food safety.
- Kitchen Setup & Maintenance: Ensure the kitchen is equipped with the necessary cooking utensils, machinery, and equipment, and monitor staff compliance with safety standards, including the use of personal protective equipment.
- Inventory Management: Maintain food inventory, check the freshness of ingredients, and keep accurate records of out-of-date items, along with managing purchase requisitions.
- Coordination with Dietitians: Collaborate with dietitians to meet the specific dietary needs of patients.
- Operational Oversight: Oversee the smooth and efficient operation of the kitchen, ensuring that all aspects of food service meet hospital standards.
Knowledge & Competencies
- Culinary Expertise: Ability to manage large-scale kitchen operations, create new dishes, and meet the dietary needs of patients and customers.
- Team Management: Strong leadership skills to train and coordinate with kitchen staff, ensuring smooth operations.
- Problem-Solving & Time Management: Ability to handle multiple tasks under pressure, with a focus on problem-solving and multitasking.
- Resource Management: Expertise in inventory and asset management, ensuring efficient use of resources and adherence to safety standards.
Qualifications & Experience
- Academic Qualification: Minimum B.Com with a background in Management or Science/Home Economics.
- Professional Qualification: Certified in Advanced Food Production, Planning, and Restaurant Management from a recognized institution.
- Work Experience: Minimum 5 years in a reputed hospital, hotel, or restaurant (hospital experience preferred).
